Duncan Ackery

As the founder of Tonic, a leading global hospitality advisory firm, Duncan is a dynamic management consultant. He has a proven 20-year track record of devising, delivering, and operating innovative hospitality businesses. Duncan’s latest project is Sessions Arts Club, opened to critical acclaim in August 2021, voted one of the best new restaurants in the world by TimeOut.

Tonic specialises in developing transformative and distinctive offerings, seamlessly embedding best in class F&B concepts into businesses. The restaurant concepts drive footfall, elevate brands, and create new revenue streams. Duncan has worked with some of the biggest global brands directly and on behalf of clients, from SoHo House, to the Bicester Village Shopping Collection, Corbin & King, Westfield, Tragaluz, Via Outlets Europe, Burberry, Samsung, Corinthia Hotels and Pret a Manger.

Duncan has unique experience in the world of Food & Beverage in Cultural Venues, of which he has advised a multitude. As CEO of Tate Catering, he oversaw the largest in-house Cultural Venue Catering Operation in the UK. He is a Board Member of Tate Enterprises and The Royal Court Trading Company and was a Trustee of The Whitechapel Art Gallery for over a decade.


Jackie James

Jackie has worked alongside Duncan for almost two decades, both operationally and as a consultant. With a career specialising in operational restaurant management, Jackie’s knowledge and wealth of experience enables her to present practical ideas and solutions. Through her experience she has a strong grasp on how best to provide the appropriate tools in delivering a fully functioning and profitable hospitality business.
Jackie’s consultancy experience has developed an insightful understanding of the clients’ needs and challenges. Her observational and communication skills facilitate the development of collaborative strategies to improve operational effectiveness and efficiency.


Rosana Suarez

Rosana has over twenty years’ experience in the hospitality sector, in both operational and managerial positions. Her exceptional organisational abilities offer invaluable project management and administrative support in the development of any F&B operation. Rosana excels in client liaison and communication, honing her skills at the Tate as a Consultant in Employee Engagement.
Rosana has recently taken on a new role at Tonic, leading our new service of day-to-day financial management and bookkeeping services.


Zico Al-Ghabban

Zico has assumed a graduate role at Tonic. His strong analytical skills provide a firm basis for Tonic’s financial and bookkeeping services. Zico is effective at combining these skills with an appreciation for burgeoning trends and cultures to produce insightful research and project support.

MANDY SHERLIKER

Design Consultant
Mandy leads Sherliker design from her offices in central London. Her experience in design for the hospitality industry ranges from working with single high-profile chefs to creating identities for international hotels, bars, and restaurants. Mandy’s expertise at the development stage of a new project help to shape the look and feel from the outset, establishing a strong visual identity. Whilst her design of material with consistent brand communication across all media cements a cohesive brand narrative. Mandy’s focus on detail and creativity supports clients through all stages of brand development. This includes the naming of the outlet, designing the logo and the supporting graphics, through to assisting with the interior decoration and the finishing aspects of the space.

Catering Design Consultant
Keith is an associate of tonic, offering back-of-house design expertise. Tonic and Keith have worked together on scores of projects including: Royal Festival Hall, Honourable Society of Lincoln’s Inn, Value Retail, Old Vic Theatre, Royal Horticultural Society, ICA, Science Gallery London.
